KALATHAKI LEMNOS

Lemnos MARKAKIS is a Protected Designation of Origin (PDO) product and is produced from 100% pasteurized goat-sheep’s milk, derived from local breeds grazing on uncultivated wildlife lands on the island.

It has the name “Kalathaki”  from the knitted molds placed during its preparation, which give its cylindrical shape and its relief shape. Traditionally, it was made in knitted baskets.

It is white cheese in the form of a small head with scattered small holes in which it holds its liquid fat. Its flavor reminds that of feta without being so acidic.

Nowadays mostly plastic knitted molds are used, where the curd is placed to drain naturally. Then it is dried for a few hours, placed in containers and driven into a ripening chamber.

Kalathaki Lemnos MARKAKIS  is available in bulk in a metal container and in an Vacuum package.

MELICHLORO CHEESE LEMNOS

Melichloro  or Melipasto is a traditionally produced cheese in Lemnos.

It is traditionally made from sheep and goat milk, which, after draining, is exposed to shady places during periods when the humidity of the atmosphere is relatively low (after the end of spring) so that it gradually becomes dehydrated.

In the first phase the cheese gets a texture between dry and dry, and when the dehydration progresses, the cheese becomes hard. You can use it with pasta, sachanaki or straight on your plate!
